Shipping Policy
Shipping charges for our cheese items are determined by the state to which the order is being shipped. There is an individual charge for each collection that you order. For our Specialty Items—books, tees, etc, we mail First Class through United States Postal Service and the postage cost is included in the price of your item.



Cheese Shipping Rates Our cheeses are shipped next-day FedEx
The shipping costs listed below are our reduced winter rates and will be in effect through March 2010.

Note: zone 4 rate is for the cities of Hololulu in HI, and Anchorage in AK only. For delivery into other areas of those states, please call for pricing.

Shipping Cheese
Due to the perishable nature of cheese and our commitment to the quality of our cheese, we ship only next-day FedEx Monday through Wednesday. We have streamlined our packaging to keep ship costs to a minimum for you and to reduce the amount of packaging that gets disposed of. Please reuse and recycle everything you can!

Tracking Your Order
We track all of our shipments throughout the day to confirm timely delivery.

FedEx will not require a signature at residential addresses and they will leave the package if no one is at home. We pack our cheeses for maximum freshness and recommend that the cheese be refrigerated within a few hours of delivery. It is the buyer’s responsibility to ensure that the recipient will be home on the day of delivery. If in doubt, consider shipping to recipient’s place of business or calling the gift recipient in advance. If you are not comfortable with your package being left at the door if you are not home, please indicate in the message area of your order and we can arrange FedEx to require a signature before leaving your package.

Cheese Care
Every package includes cheese care instructions and our cheese brochure with pairing notes and wonderful recipes by our favorite local chefs. Here are a few helpful tips:
• Our rind ripened French-style cheeses have a natural aroma. Don’t worry—it’s natural and your taste buds will be rewarded! Store our cheese wrapped in the paper in which it is delivered, a wooden cheese box, parchment or wax paper.
• The rinds on our cheeses are edible but may not all be to your taste. We encourage eating the rind for the full experience but taste for yourself to know what you prefer.
• Cheese tastes best at room temperature. Bring out about an hour before serving.
