Recipe: “Lucky 8″ Salad With Goat Yogurt Peanut Sauce

Redwood Hill Farm "Lucky 8" Salad with Goat Milk Yogurt Peanut Sauce

The number “8” is very lucky for the Chinese, so it’s not unusual to find a delicious dish with eight special ingredients on the table during Chinese New Year. Traditionally, eight ingredients like bamboo shoots, bean shoots and other “lucky” ingredients are stir-fried together to make something truly delicious.

You can choose any ingredients you love, but we like the crunch of the cucumbers, the slightly spicy radish wedges and the sweetness of the tomatoes when paired with the peanut and goat yogurt sauce. The egg ribbons add an Asian flavor to this salad, and the addition of fresh herbs give an added freshness with every bite. The carrots are also important since they are thought to bring luck.

Redwood Hill Farm Manager Scott Bice

Where does this goat farmer get his energy?

Managing a goat dairy requires long days and stamina to keep everything running smoothly. This means getting up before dawn and working all day – and, during spring “kidding season,” into the night as well, welcoming new baby kids into the world. Where does Farm Manager Scott Bice get all his energy?

His secret weapon is his “No Kidding Around” Chore-Time Energy Smoothie.” This special concoction, featuring our wholesome goat milk kefir and Scott’s own custom nutrient-rich add-ins, will energize you in the morning and sustain you through work or play.

Update your classic holiday green bean casserole, using our cheddar goat cheese, lactose free sour cream, and fresh, in-season fennel and green beans.

“As a kid, my very favorite Thanksgiving dish was the green bean casserole. It still is, come to think of it. I suppose it’s one of the formative flavors from my childhood. Fast forward a few decades, and now that I’m pushing forty (gah!) and have changed how I eat, the notorious canned-soup version doesn’t really hold the same appeal for me. So what to do? Make a new dish that kicks the old one’s butt, that’s what!”
