Camembert-Style Goat Milk Cheese

Named after one of our favorite does, Camellia is a luscious, Camembert-style goat milk cheese. It has a mild, buttery flavor and firm texture when young, becoming softer and more complex with age. The white, edible penicillum candidum rind ripens the cheese from the outside inwards, becoming fully ripe when the center is soft to the touch (like a ripe peach). This usually takes 5-6 weeks, though the cheese is delicious at any age.

Cameo

Cameo is an 8 oz. semi-soft Camembert inspired bloomy rind cheese delicately covered with a variety of fresh herbs, was awarded "Best in Show" at the 2011 California State Fair Cheese Competition! Like Camellia, Cameo's mild buttery flavor ages beautifully with a complex herbal infused flavor and a Camembert's classic ultra  creamy interior. 

Chef's Camellia

Also available is Chef's Camellia, our 8 oz. version without herbs. Both Cameo and Chef's Camellia are our favorites with restaurants, local chefs and fine caterers here in Sonoma County and beyond.

Storage & Serving Suggestions

Wrap cut pieces in cheese paper or parchment paper. Storing in plastic wrap is not advised as it does not allow the cheese to breathe. Enjoy these multiple award winners at room temperature, paired with fresh apple or pear and your favorite wine.
